Start From Scratch Chardonnay 2022 |
This small lot wine was Barrel Fermented with “wild” yeast and aged in new and used premium Canadian Oak. It has over the top notes of apricot, tangerine, caramel and coconut milk. The palate gives way to a big and round mouth feel with an extremely long finish.
This calls for buttered lobster, cream based dishes and rich soft cheeses.

Rick VanSickle- (91 points) — This Chardonnay is wild fermented and aged in Canadian oak (20% new) for 11 months. It’s one of only a few Ontario Chardonnays aged in Canadian oak, which, Brooks said, has created a “fanatical following” at Back 10, but admits, “it can be polarizing.” The vanilla toast aromas are evident on first sniff, but it integrates as you swirl the glass to reveal poached pear, yellow apples, nectarine and some melted butter and cream notes. It has a rich and luxurious feel on the palate with creamy/spicy notes, ripe stone fruits, lemon curd and plenty of lift on the long finish. Perfect lobster pairing.
Sara d'Amato -(89 points)This flavourful chardonnay with an unusually copper-pink hue is spontaneously fermented and aged in new and older Canadian oak barrels. Finely balanced and offers a more significant mouthfeel and concentration than the norm for an abv of 12.5%. Notes of pear and peach lead into flavours of passion fruit, starfruit, lime and elderflower along with a crunchy bite of salinity on the palate. Very good length. Tasted March 2025

Consistency is so important when it comes to making a wine as Canadian is this bottle of Chardonnay. Canadian oak barrel and indigenous yeast are were used to make this wine. The nose offers buttered popcorn, bright citrus notes and roasted pineapple with vanilla bean tossed into the mix. This comes in big and round with caramel and vanilla notes layered over pineapple, tangerine, apricot and peach. This wine finishes long and needs no food to be savoured. - Andre Wine Review
